Baked Common Octopus with Potatoes
Oven baked Common Octopus with potatoes is considered as a delicacy - with good reason. It takes some time to prepare it, but in the end, one gets fantastic meal, good as everyday meal, but also for some special occasions.
Preparation is simple: clean the octopus and put it into the pot with cold water, with some salt, pepper, laurel leaf and some vinegar. After 10 minutes of boiling, take octopus out of water and put it on baking pan and add potatoes, some salt, pepper, little bit of chopped rosemary and lavender, few slices of onion, few tablespoons of olive oil and a glass of good white wine. Also, add a glass of water where octopus was boiled - this will improve taste of potatoes even further.
Wrap pan into the aluminum foil and put in in the oven and bake everything with foil for about 25-30 minutes on 200°C. Remove foil, check if water needs to be added and continue with baking (now without foil!) for 15-20 minutes - until potatoes are done.
Great thing about this meal is that it is actually simple to make - regardless if you are preparing it for 2-3 or for 8-10 or even more people - one just needs practice :)
Serve warm with bread, slice of lemon and salad - I prefer lettuce salad with some (spring) onions with baked octopus. Glass of wine, who prefers it.
