Simple Potato Salad Recipe
Potato salad is one of my favorite salads to be served with seafood as a side dish. It is easy to make, although it requires some cooking.
How to Make a Potato Salad
Preparation is simple. In suitable pot put some water to boil and add some salt. Peel off potatoes and put them whole into the water (generally, before the water starts to boil).
Some people like to add herbs to water where potatoes are being boiled - personally, I like to add a single leaf of laurel and small slice of green paprika, since they are strong enough to give a nice aroma to potatoes and they are easily removed later. Other herbs include lavender, thyme, rosemary, parsley, celery and various Mediterranean herb mixes.
Boil the potatoes on medium heat.
While potatoes are boiling (depending on the size, they are cooked in cca 30-40 minutes), take one to two green onions, wash and then chop them on kitchen board. Of course, one can use ordinary onions and even add a single clove of minced garlic and some chopped parsley.
After potatoes are done, slice them and then add green onions. There is no need to add salt or herbs, just add a tablespoon or two of extra virgin olive oil.
Gently mix everything.
And easy potato salad is done!

Serve warm with various seafood dishes starting from ordinary fried fish to fish stews and barbeques.
Note: some people like to add mayonnaise to potato salad, but that is just an overkill :)
Add mayonnaise, mustard, herbs and spices to improve the taste of the cooked food, not to overwhelm it!
