Mackerel Fish Soup
Mackerels and similar species are often caught when trolling, sometimes in large numbers. Soup made out of such fish is easy and quick meal to make and it is very tasty.
Clean the fish (remove the heads, too). If the fish is larger, cut them in half so that they can fit into the pot easily.
In suitable pot, put water and add some salt, pepper, a leaf of laurel, 1-2 tablespoons of olive oil, an onion (whole), a clove of garlic (whole), few carrots (sliced, but not into too little chunks), some celery. Let it boil for some 20 minutes.
Then, add fish into the pot and boil everything on low heat for about 15 minutes.
Remove fish and put it on a warm plate.
Using fine strainer, pour the liquid into another pot. If you like, add carrots to the liquid (using fork - that is the reason why you should not slice carrots to very small chunks), add pasta and boil for 7-8 more minutes, until pasta is done. And that is all - you have a fine fish soup and few servings of boiled mackerels.
Suggestion for serving:
- first, serve a fish soup as light appetizer,
- second, serve boiled fish (still warm!) with some light salad (for example potato salad) or some vegetable mix as main course dish. If you like, ad minced garlic, lemon juice and olive oil onto the fish. Whole grain bread and some good wine will complete the big picture! :)
